Native to Western Asia and Europe, fenugreek has been cultivated for centuries primarily because it was thought to have healing virtues. An old fashioned Arabic greeting was, “May you tread in peace the soil where fenugreek grows.” Fenugreek adds rich flavor to vegetarian dishes that need a boost, and is traditional on marinated lamb for kabobs or gyros, and is delicious when added to beef stews. Fenugreek is also used in breads, Indian cuisine and for pickling.
