Tossing in a few Shallots can enhance any dish. The flavor is sweet and delicate. Freeze-dried shallots make a nice addition to any dish without being quite as overwhelming as garlic or onion. Shallots help make wonderful sauces with butter and white wine used with shrimp or scallops. Also used in sauces vegetables or salad dressings. They can be easily powdered and sprinkled over chicken, fish, or beef.
