Tarragon is native to Siberia and is sweet and aromatic, reminiscent of fennel and anise. It is a must in classic French cuisine. Go lightly when using French tarragon in cooking as the herb can easily overpower the other flavors. Wonderful with poultry, fish like Dover Sole, vegetables including artichokes, sauces (especially béarnaise), lobster, shellfish, eggs and cheese, mushrooms, vinaigrettes, and stuffing.
